What is Jerky?

Jerky is basically a lean meat that has been dried to prevent spoilage. After trimming all visible fat from the meat, it is usually cut into strips before being dried. Meat can then be marinated in seasoned spices. Salt is added to prevent bacteria from developing on the meat before sufficient moisture has been removed in the drying process. A dehydrator or smoker is used to dry the meat. Smoking is a traditional method that preserves, flavors, and dries the meat all at the same time. Once dried, jerky is ready-to-eat and needs no additional preparation. The best part is that it can be stored for months without refrigeration.

Why make Homemade Jerky?

Most people are overwhelmed by the thought of making their own homemade jerky. But here’s why I think that you should start making your own: Store bought jerky often has high sodium levels because table salt is used, not sea salt. MSG can be added to some commercially made jerky. Chemical preservatives, such as sodium nitrite, are also added. And most importantly, you pretty much know that the majority of the meat used to make commercial jerky does not come from grassfed or pastured sources. When you make homemade jerky, you control exactly what goes into your jerky, and what doesn’t. You’ll use grassfed or pasture raised meat, a high quality sea salt, and organic seasonings to make your homemade jerky.

Did you know that all that is needed to produce basic “jerky” is a low-temperature drying method, and salt to inhibit bacterial growth. Spices are completely optional.

You can make your own Homemade Jerky with Grassfed Ground Beef with this very easy recipe. Please don’t feel that you are limited to only using ground beef to make homemade jerky. You can also use ground bison, ground lamb, ground venison, ground chicken, ground turkey, or ground pork. Just make sure that you choose grassfed meats, pastured poultry and pastured pork. Season which ever ground meat you choose with organic herbs and spices to suit your tastes. You can also used preseasoned grassfed meats like bison breakfast sausage or sugar free pork breakfast sausage.

Homemade Jerky with Ground Beef

Basic Recipe for Homemade Jerky with Grassfed Ground Beef:
Grassfed ground beef (or use lamb, venison etc)
~ 1-2 tsp/lb Celtic Sea Salt
Seasoning – black pepper, chili powder, cumin, red pepper flakes, paprika, Chinese 5 spice (all optional)

Thoroughly mix the ground meat with salt (required) and seasoning (if used) Press or roll it out evenly, to approx 1/4″ thick and put it on the dehydrator trays. Dehydrate at 165 F for 2-5 hours until dry. The drying time depends on humidity in your home.
