Making your own Raw Banana and Almond Butter Ice Cream is very quick and easy. The result is a dairy-free creamy dessert treat with the consistency of soft serve ice cream. All you need are 5-6 frozen bananas and raw almonds [OR use other nuts, or even sunflower seeds for nut free version] I prefer to peel the bananas first before freezing. Just peel and squish up in freezer bags. Leave in freezer for a few hours, or overnight. [best]
If you’re making almond butter, use 1-2 cups of almonds to make a decent quantity. Add as much as you like to your banana ice cream! If you use premade almond butter, use according to taste. Feel free to use any nut you prefer. Hazelnuts + a little cacao powder added make nutella. Nutella ice cream anyone?
In your food processor or blender, blend raw almonds into a creamy, smooth texture (to make a nut butter). Depending on how powderful your blender is, this might take anywhere from 5-10 minutes. Just be patient. I love my Blendtec for making nut butter. I always use the Blendtec Twister Jar attachment.
After you’ve made the nut butter, remove most of the nut butter and store in mason jars in your fridge. And don’t forget it is there!
Leave some nut butter in the processor. Add in your frozen chopped banana. Pulse! Blend the banana with the almond butter until creamy and smooth.
Add in a little extra nut butter (if needed) as well as any other fun ingredients* and blend.
This is a very simple basic recipe that can be modified per your personal dietary preferences.
The result is a beautiful creamy Raw Banana & Almond Butter Ice Cream!
* Optional Extras to add:
Unsweetened coconut flakes + 1-2 tablespoons raw cacao powder
Stir in a handful of raisins or other dried fruit
Frozen cherries + vanilla extract + chocolate chunks
Peppermint extract + dark chocolate chips or cacao nibs
